Water's Structure and Special Properties
Water is a polar molecule, meaning it has regions of positive and negative charge. This polarity allows water molecules to form hydrogen bonds with each other, creating cohesion—the ability of water molecules to stick together.
This cohesive nature gives water remarkable properties. Surface tension, which makes water's surface act like a stretchy film, allows insects to walk on water and plants to pull water upward through their stems. Water also exhibits adhesion, the tendency to cling to other substances, which works with cohesion to move water up narrow tubes in plants.
Water's properties affect temperature regulation in living things. Thermal energy represents the motion energy of molecules, while temperature measures the average kinetic energy of molecules. Because of hydrogen bonding, water can absorb significant heat with minimal temperature change.

Water has an exceptionally high specific heat, which is the amount of heat required to raise the temperature of 1 gram by 1°C. This property helps organisms maintain stable internal temperatures despite environmental fluctuations.
Evaporative cooling is another crucial temperature-regulating process. When water evaporates, it requires energy (called heat of vaporization), which is pulled from the surrounding environment. The fastest-moving (hottest) water molecules escape as vapor, leaving behind slower-moving molecules and creating a cooling effect.
Water's polarity makes it an outstanding solvent—substances that dissolve in water are called hydrophilic (water-loving), while those that don't are hydrophobic (water-fearing). This solvent ability is essential for cellular processes where nutrients, wastes, and signals need to move freely.

Buffers help organisms maintain stable pH levels. These specialized chemical systems consist of acid-base pairs that can either release or absorb hydrogen ions as needed. When acids or bases enter a system, buffers minimize pH changes by neutralizing these substances, protecting the organism from harmful fluctuations.
Application: Your blood contains a carbonic acid-bicarbonate buffer system that keeps your blood pH around 7.4. Without this buffer, even small changes in your diet could cause dangerous pH shifts!
